Yes. Yes, you can, and it will look like this…

A Gressingham duck, spatchcocked.

I salted it, and left it uncovered in the fridge overnight, because that gets the skin dry enough to crisp up nicely when it’s cooked. It only takes about 45 minutes to cook, too!
